ZUCCHINI BREAD | |
2 c. of zucchini, shredded 1 c. oil 2 c. sugar 3 eggs 1 tsp. cinnamon 3 c. flour 1/2 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 3 tsp. vanilla Preheat oven to 350°F. Cover shredded zucchini and set aside. Beat together oil, sugar and eggs. Add cinnamon. Combine dry ingredients. Thoroughly combine egg mixture with flour mixture. Add vanilla. Lastly, add zucchini, including all liquid in the bowl and mix well. Pour into 2 greased loaf pans or cake pan or muffin tin. Bake at 350°F for 1 hour. |
