STRAWBERRY BREAD WITH STRAWBERRY
SPREAD
 
3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
1 tsp. salt
2 (10 oz.) pkgs. frozen strawberries, thawed, drained with juice saved
1 1/4 c. cooking oil
4 eggs, well beaten
1 (8 oz.) pkg. cream cheese
1/2 c. saved strawberry juice

In a large bowl combine flour, baking soda, cinnamon, sugar, and salt. make a hole in center of dry ingredients. Pour in strawberries, oil and eggs. Mix by hand until thoroughly combined. Pour batter into 2 greased and floured 9 x 5 x 2 1/2 inch loaf pans. Bake at 350 degrees for one hour. Cool. Combine cream cheese and strawberry juice in blender and blend until mixture is spreading consistency. Spread on cooled bread slices.

NOTE: Blueberries, bananas, zucchini and other fruits may be substituted.
