POLYNESIAN MEATBALLS 
2 lbs. ground beef
3 tbsp. soy sauce
2 tbsp. brown sugar
10 oz. finely chopped water chestnuts
1/2 tsp. onion powder (optional)
1 tsp. parsley flakes
1/2 tsp. garlic powder or 2 cloves, minced

Combine all ingredients in large bowl. Mix well. Shape into small bite-size balls - at least 40. Place on baking sheet with sides. Bake in 375 degree oven for about 15 minutes. Serve hot with Apricot Sauce. May be reheated in 400 degree F oven for about 5 minutes.

APRICOT SAUCE:

1 c. apricot jam
3 tbsp. cider vinegar
1/4 tsp. paprika

Combine ingredients and stir well.
