BANANA - NUT LOAF 
2 c. all-purpose flour
2 tsp. baking powder
3/4 tsp. salt
1/4 tsp. baking soda
1/2 c. shortening
1/2 c. sugar
2 eggs
1 tsp. finely shredded orange peel
2 ripe med. bananas, cut up
2 tbsp. milk
1/2 c. chopped pecans or walnuts

Lightly grease a 9 x 5 x 3 inch loaf pan; set aside. In a mixing bowl thoroughly stir together the flour, baking powder, salt and baking soda; set aside.

In a small mixer bowl, cream the shortening and sugar until light and fluffy. Add eggs and orange peel; beat well. In a small bowl, mash bananas with fork (should have about 1 cup). Stir in milk. Add flour mixture and banana mixture alternatively to cream mixture. Beat until smooth after each addition. Fold in nuts. Pour batter into prepared pan. Bake in 350 degree oven for 45 to 50 minutes or until wooden pick in center comes out clean.
