REFRIGERATOR YEAST DOUGH | |
1 c. boiling water 3/4 c. shortening 3/4 c. sugar 1 1/2 tsp. salt Dissolve shortening in boiling water and add sugar and salt in large bowl. Let cool to room temperature before adding eggs and yeast mixture. 2 eggs, beaten 2 pkgs. yeast 1 c. water 2 tbsp. sugar 6-7 c. flour (Mix sugar, yeast and water and set aside while you mix first part). When mixture has cooled add eggs and yeast mixture. Stir to mix. Add flour and mix well. DO NOT KNEAD! Cover and place in refrigerator. May be kept in refrigerator up to 10 days. Punch down occasionally. When you want to shape rolls - grease a pan, shape your rolls, leaving space between rolls for rising. Cover and let rise until doubled. Bake at 400 degrees about 10 minutes. Makes about 4 dozen rolls. |
