SPINACH SOUFFLE 
1 sm. carton cottage cheese
1/2 lb. Cheddar cheese, grated
2 sm. pkg. frozen spinach, thawed
3 tbsp. flour
1/3 c. melted butter
3 eggs, beaten
Salt & pepper

Mix cottage cheese and eggs. Add Cheddar cheese and flour. Add spinach, mix. Pour into baking dish. Pour melted butter on top. Bake 40 minutes at 350 degrees.
