CHICKEN SALAD 
1 c. carrots, shredded
1 c. celery, diced
2 tbsp. onion, minced
2 c. cooked chicken, diced

DRESSING:

1/2 c. Miracle Whip
1/2 c. mayonnaise
1 to 2 tbsp. milk
1 tsp. lemon juice
Salt to taste
1 can shoestring potatoes

Mix salad ingredients together. Blend dressing ingredients and add to salad. Let rest in refrigerator for at least 2 hours. Just before serving, add the shoestring potatoes. Excellent lunch salad. Serves 4.
