CHICKEN SIMON AND GARFUNKEL 
3 boned chicken breasts, skinned and halved
1 stick butter
Salt and pepper
6 slices mozzarella cheese
Flour
1 egg, beaten
Fresh bread crumbs
2 tbsp. parsley
1/4 tsp. thyme
1/4 tsp. sage
1/4 tsp. rosemary

Preheat oven to 350 degrees. Flatten chicken between sheets of waxed paper. Spread with half the butter. Season with salt and pepper. Place 1 slice cheese on each piece of chicken, roll and tuck ends. Coat lightly with flour, dip in egg. Roll in bread crumbs.

Arrange in baking dish. Melt remaining butter and add parsley, sage, rosemary, and thyme. Bake chicken for 30 minutes basting with butter mixture. Pour wine over chicken, bake for 20 minutes longer, basting with pan liquid.
