FLAN 
1/2 c. sugar
4 eggs
1/3 c. sugar
1/4 tsp. salt
1 1/2 c. UNDILUTED Carnation evaporated milk
1/2 c. water
1 tsp. vanilla

Melt 1/2 cup sugar in small skillet over low heat. Stir constantly until sugar turns to a golden brown syrup. Pour into decorative 4-cup metal mold; tip and turn mold to coat inside with syrup. Beat eggs, sugar and salt together. Add evaporated milk, water and vanilla; mix well. Pour into caramel-coated mold. Set in shallow pan filled with water to height of flan. Bake in moderate oven (350 degrees) 60 to 70 minutes or until knife inserted 1 inch from center comes out clean. Remove flan; chill at once. To serve, invert flan and unmold. Garnish with orange slices and mint sprigs. Makes 6 to 8 servings.
