ELENA'S FAVORITE TWO-LAYER
BROWNIES
 
FIRST LAYER:

1 c. oats
1/2 c. brown sugar
6 tbsp. butter, melted
1/2 c. flour
1/4 tsp. baking soda
1/4 tsp. salt

Preheat oven to 350 degrees. Mix together oats and sugar. Stir in butter and set aside. Sift flour, baking soda, and salt and add slowly to oat mixture, stirring well. Pat batter in lightly greased 8-inch square pan. Bake for 10 minutes. Remove First Layer from oven.

SECOND LAYER:

1/4 c. butter, melted
3/4 c. sugar
3 tbsp. cocoa powder
1 egg
2/3 c. flour
1/4 tsp. baking powder
1/4 tsp. salt
1/4 c. milk
1/2 tsp. vanilla
1/2 c. chopped nuts

Mix together butter, sugar, and cocoa powder. Beat in egg. Set aside. Sift flour, baking powder, and salt. Add to cocoa mixture along with milk and vanilla, stirring well. Add nuts.

Using spatula, being careful not to touch sides of pan. Spread Second Layer over First Layer; return to oven. Bake for 25 minutes more. Remove from oven and let cool.

CHOCOLATE FROSTING:

1 tbsp. butter melted
1 1/2 tbsp. cocoa powder
3/4 c. confectioners sugar
1-2 tbsp. milk

Mix together butter and cocoa powder and then slowly stir in sugar and milk, continuing to stir until mixture can be spread easily.

Spread frosting over top of brownies; cut into 2-inch squares. Yield: 16 brownies. Each: about 240 calories, 11 g fat, 14 mg cholesterol, 200 mg sodium.
