RUM PECAN CAKE 
1 c. plain flour, sifted
1 tsp. baking powder
1 tsp. salt
1 c. sugar
4 lg. eggs, separated
4 tbsp. rum
1 tbsp. vanilla
1 lb. pecan halves
1 lb. dates, pitted & cut-up fine

Use 1/4 cup sifted flour, adding to dates and pecans, mixing well to coat. Sift remainder of flour, salt, sugar and baking powder together. Add to nuts and dates. Add rum and vanilla to egg yolks. Mix with mixer 2 minutes. Pour yolk mixture over flour mixture and mix well. Beat egg whites until stiff. Fold into above mixture. Bake 1 hour at 300 degrees. Be sure and line tube pans with brown greased paper. Test for doneness.
