PUMPKIN PIE 
4 c. pumpkin (29 oz.)
4 eggs
2 1/2 c. sugar
1 tsp. salt
1 tsp. nutmeg
4 c. milk (3 c. evaporated milk-1 c. water)
4 tsp. cornstarch
1 1/2 tsp. cinnamon

Mix all ingredients. Pour into unbaked pie shells. Sprinkle top of pie with cinnamon. Bake at 375 degrees for 8 to 10 minutes, then turn down oven to 350 degrees and continue to bake for 40 to 45 minutes. Makes 3 to 4 pies depending on size of crust.
