SPINACH PIE | |
1 lb. fresh spinach or 4-5 pkg. frozen 2 lg. onions 4 eggs Salt & pepper to taste 2 tbsp. oil 1. Place frozen spinach (covered) in a kettle of boiling water (following the directions on the package). If using fresh spinach, rinse well in several changes of cold water. 2. In separate frying pan, oil pan and add coarsely chopped onions and fry lightly. 3. When spinach is cooked, place in colander and squeeze as much as possible all liquid from vegetable. 4. Then combine beaten eggs, salt and pepper, onions and spinach; stir in large bowl. Melt 2 tablespoons oil or more in large frying pan (heavy skillet) and add the mixture and pat even. 5. Cover and cook over low heat until set on bottom (about 10 minutes). 6. Remove cover and invert a large dinner plate over skillet. Quickly and carefully turn skillet over so the "pie" falls onto the plate. 7. Add another tablespoon oil and slide the uncooked side of pie into skillet. Cook until the side is set and done (about 10 minutes). 8. Empty onto a platter and cut into wedges. Serve hot or cold. |
