SPICED ZUCCHINI BREAD 
3 c. flour
2 tsp. baking soda
1/2 tsp. baking powder
1 1/2 tsp. cinnamon
3/4 c. chopped nuts
1 (8 oz.) can crushed pineapple
3 eggs
2 c. sugar
1 c. oil
2 tsp. vanilla
2 c. shredded zucchini
1 tsp. salt

Combine flour, soda, salt, baking powder, cinnamon and nuts. Set aside. Beat eggs in large bowl. Add sugar, oil, vanilla and mix until creamy. Stir in the zucchini and pineapple. Add dry ingredients stirring only until moist. Spoon batter into 2 greased and floured loaf pans. Bake at 350 degrees for 1 hour or until done. Makes 2 loaves.
