CRAB MEAT SALAD 
2 c. snow crab met
3/4 c. chopped celery
4 green onions, chopped
1/4 c. minced parsley
1/4 c. mayonnaise
1 tbsp. Dijon mustard
1/4 c. heavy cream, whipped
2 tbsp. sliced almonds, toasted
1/4 tsp. Cajun seafood seasoning
Lemon slices to garnish
Lettuce leaves to garnish

In large bowl combine crab meat, celery, onions and parsley. In another bowl combine mayonnaise and mustard, then fold in whipped cream. Add dressing mixture to crab mixture; mix lightly but thoroughly. Add almonds and seasoning to taste. Garnish with lemon slices and lettuce. Makes 6 servings.
