MEXICAN WEDDING COOKIES | |
1 c. butter, softened Unsifted confectioners' sugar 2 c. regular all-purpose flour 1/4 tsp. salt 1 tsp. vanilla extract Cream butter. Gradually add 1/2 cup confectioners' sugar and cream until fluffy. Add remaining ingredients and mix well. Pinch off small pieces of dough and roll with hands into finger shapes. Preheat oven to 375 degrees. Place cookies on ungreased cookie sheets and bake about 10 minutes. While still hot, roll in confectioners' sugar. Makes about 3 dozen. Pecans or walnuts may be added to cookie batter in which case the cookies take on the flavor of the nuts. Store air tight. May be frozen. |
