EASY ORANGE ROUGHY 
1 lb. thawed orange roughy
2 tsp. soft butter
1/8 tsp. pepper
2 tbsp. lemon juice

Arrange fish pieces in bottom of shallow microwave - safe dish. Spread with butter. Sprinkle with pepper and lemon juice. Cover with plastic wrap. Cut 1 inch slit in center of wrap. Microwave on high 8-10 minutes or until tender, turning dish and checking frequently. Serve with additional lemon juice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
