APPLESAUCE-RAISIN-NUT COOKIES | |
1 3/4 c. whole wheat pastry flour 1 1/2 c. quick-cooking oats 1/2 tsp. baking soda 1/2 tsp ground cinnamon 1/4 tsp. salt 1/4 tsp. ground nutmeg 3/4 c. butter, room temperature 1 c. packed light brown sugar 1 lg. egg 1 c. applesauce 1/2 c. raisins 1/2 c. chopped walnuts or other nuts Heat oven to 350 degrees. Have greased cookie sheet ready. Mix flour, oats, baking soda, cinnamon, salt and nutmeg. In a large bowl beat butter and sugar with electric mixer on medium speed until fluffy. Beat in egg until well blended with mixer on low speed. Add flour mixture alternately with applesauce; beat until blended. Stir in raisins and nuts. Drop by heaping tablespoons 3 inches apart onto prepared cookie sheet. Bake 12-15 minutes until golden brown. Cool on sheet about 1 minute before removing to racks to cool completely. Makes 24 soft 3-inch cookies. |
