PICKLED ONIONS 
1 c. water
1 c. white vinegar
1/4 c. sugar
1 lg. sweet onion, thinly sliced (purple best)
1/2 tsp. salt
2 tsp. whole cloves
6 inches of stick cinnamon, cut into 1" pieces

Combine water, sugar, salt, cinnamon and cloves. Simmer covered for 10 minutes. Strain. Add food coloring. Pour hot mixture over onion rings. Chill overnight, stir occasionally. Drain and serve or store covered in juice.
