APPLE FRITTERS 
1/2 c. all-purpose flour
1 egg, separated
1/4 c. water
1 tsp. oil
Oil for frying
2 lg. apples, peeled, cored & cut in 1/4 inch rings
Powdered sugar

Beat the flour, egg yolk, water and oil well. Beat the egg white until stiff and fold into the batter.

Pour oil to a depth of 1 inch into a large heavy skillet and heat until hot. Dip the apple slices in the batter, letting the excess drip off and carefully slide into the hot oil. Fry for 2 to 3 minutes or until golden. Drain on paper towels and sprinkle heavily with powdered sugar. Serve hot with cream. 4 servings.
