GINGER SPICE LOAF
4 2/3 cups all-purpose flour
1 teaspoon baking soda
2 tablespoons ground cinnamon
1 tablespoon ground cloves
1 tablespoon ground ginger
15 tablespoons unsalted butter, room temperature
1 cup plus 1 tablespoon granulated sugar
3/4 cup Karo light corn syrup
1/3 cup plus 2 teaspoons milk
1 teaspoon vanilla

Preheat oven to 350°F. Grease a loaf pan and dust lightly with flour; shake out excess.

In a medium bowl, combine flour, baking soda, cinnamon, cloves, and ginger. Stir til well mixed and no streaks from spices remain.

In a large bowl, beat butter til light, gradually adding sugar. Beat in corn syrup mixed with milk and vanilla. Stir in dry ingredients and beat only until mixed, for about 30 seconds (some lumps can remain).

Transfer batter to greased bowl and bake for 30-40 minutes, or until a wooden pick inserted in center comes out clean. Cool in pan for 5 minutes, then transfer to wire rack to cool completely.
