FRESH FRUIT GINGER BREAD 
1/2 c. butter
1/2 c. honey
1/2 c. strong coffee
1 egg, beaten
2 c. whole wheat pastry flour
1/2 tsp. salt
1 tsp. baking powder
1/2 tsp. baking soda
2 tsp. ginger
1/2 tsp. cinnamon
1/4 tsp. cloves
3/4 c. buttermilk
1 c. sliced apples, peaches, pears or kiwi fruit

In large mixing bowl, mix together butter, honey, coffee and egg; set aside. In a bowl, stir together flour, salt, baking powder, baking soda and spices. Add to honey mixture alternately with buttermilk.

Cover the bottom of a greased 8x8 inch square pan with sliced apples, peaches and pears. Pour batter over fruit slices. Bake at 350 degrees 50 minutes or until center tests done. Let stand for 10 minutes before unmolding. Drizzle honey over hot cake, coating fruit. Makes 9 servings.
