CHICKEN CHOW MEIN 
2 c. cooked chicken
2 tbsp. oil
2 c. finely sliced celery
1 1/2 c. sliced onions
Salt & pepper to taste
2 c. chicken broth
1 #2 can Chinese or Deluxe mixed vegetables
1 (4 oz.) can mushrooms (optional)

Brown chicken in oil. Add celery, onions, salt and pepper. Add chicken broth and cook covered until vegetables are tender. Add drained Chinese vegetables and drained mushrooms and heat to boiling.

Mix 2 tablespoons of cornstarch to 3 tablespoons of soy sauce and add to hot mixture, stirring constantly, will thicken. Simmer 2 minutes or until thickened. Serve over rice with Chun King chow mein noodles.
