YAM CASSEROLE 
4 c. yams/sweet potatoes
1 c. brown sugar, packed
8 tbsp. butter, melted
1/2 tsp. nutmeg
1/2 tsp. cinnamon

Mash the canned, boiled, baked or microwaved yams. (I use hot yams right out of microwave). Add rest of ingredients and mix together. Put mixture into 1 1/2 quart casserole. Heat the casserole if mixture has cooled. Bake for 15 to 30 minutes at 400 degrees.

Delicious with ham, turkey or chicken.

For a variation, make half the recipe and place yam mixture on pineapple rings, using ice cream scoop. Top with small marshmallows and cherry, if you like. Bake 10 minutes at 400 degrees. Serves 6 to 8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
