ORANGE CARROT CAKE 
1 c. all-purpose flour
1 tsp. baking powder
1 tsp. ground allspice
1/2 tsp. ground cinnamon
1/4 tsp. baking soda
1/8 tsp. salt
2 eggs or 3 egg whites, lightly beaten
1/2 c. sugar
1/3 c. vegetable oil
1/3 c. thawed orange juice concentrate
1 c. grated carrots
1 1/2 tsp. powdered sugar

Combine flour, baking powder, allspice, cinnamon, soda and salt in a medium bowl; set aside.

Combine eggs, 1/2 cup sugar, oil and orange juice concentrate in a large bowl; beat well. Add flour mixture and carrots, stirring until well blended.

Spoon batter into a greased 8 inch or 9 inch square baking pan. Bake at 350 degrees for 30 minutes or until done. Cool cake in pan; sprinkle with powdered sugar and cut in squares. Makes 9 servings.
