LEMON ICE BOX CAKE 
1 (3 oz.) pkg. lemon Jello
1 c. boiling water
1/2 c. cold water
Juice of 1 lemon
Grated rind of 1 lemon
1/3 c. sugar or honey
1 lg. can evaporated milk, chilled
2 c. crushed vanilla wafers

Dissolve Jello in boiling water. Add cold water, lemon rind and juice and sugar. Mix well. Chill mixture until it starts to gel.

Whip chilled evaporated milk in a very large mixing bowl. Add lemon mix gradually, beating until well blended.
