STRAWBERRY SHORTCAKE 
2 pts. strawberries
1 tbsp. sugar or honey
1 tbsp. orange juice

BISCUITS:

2 c. flour, all purpose
3 tbsp. sugar
4 tsp. baking powder
Dash of salt
Grated rind from 1 orange
1/4 c. butter
1/4 c. shortening
2/3 c. sour cream
1 c. whipped cream
1 tbsp. sugar

1. Rinse berries, pat dry. Slice and put in a bowl. Sprinkle with sugar or honey and orange juice. Let sit for 30 minutes.

2. In another bowl sift together dry ingredients. Add orange rind. With knife cut in butter until coarse crumbs form. Lightly mix in sour cream to form a soft dough. Roll out dough 3/4" thick on floured board. Cut dough into 6 circles, 3" wide. Place on greased baking sheet. Bake at 400 degrees until puffed and golden, about 15 minutes. Remove from oven. Split biscuits in half with fork while warm. Place bottom halves on serving dishes. Top with berries and tops of biscuits. Garnish with whipped cream.
