BEET RELISH (CANNED) 
1 qt. chopped beets, cooked
1 qt. shredded red cabbage
1 3/4 c. chopped celery
1 c. chopped onion
1 c. cranberry juice
1 1/2 c. white vinegar
1 2/3 c. sugar
2 tbsp. horseradish
2 tsp. orange rind
1 tsp. salt
1/4 tsp. pepper
1/2 tsp. cayenne pepper

Combine all and boil 5 minutes. Ladle into sterilized jars (pints).,

Process 15 minutes in hot water bath. Do not open for one month.
