MOCK APPLE PIE | |
Pastry for 2 crust pie 36 Ritz crackers 2 tsp. cream of tartar 2 tbsp. lemon juice Grated rind of 1 lemon butter and cinnamon Roll out and fit bottom crust into 10 inch pie pan. Break crackers coarsely into pastry-lined pan. Combine water, sugar, and cream of tartar in saucepan; cook gently 15 minutes. Remove from heat. Add lemon juice and rind. Cool. Pour syrup over crackers. Dot generously with butter. Sprinkle with cinnamon. Top with top crust and bake at 425 degrees for 30 to 35 minutes until crust is crisp and golden brown. |
