RICE PUDDING SUPREME | |
1 qt. whole milk 1 stick cinnamon 1 tsp. salt 3 eggs 1/2 c. converted rice 1/2 c. sugar 1 c. milk 1/2 c. raisins Cook 1 quart whole milk and 1/2 cup rice with cinnamon stick in top of double boiler for 1/4 hour. Add sugar and salt; cook for 1/2 hour more; stir occasionally. Remove from heat and add 1 cup milk, 3 beaten eggs, and raisins. Place mixture in a large casserole dish. Place dish in shallow pan of water. Bake in 350 degree oven. Stir in 10 minutes, again in 15 minutes. Bake a total of 45 minutes or until congealed. Serve with lingon berries to add color and enhance flavor. |
