COOL LIME PIE 
1 pkg. Jello-brand vanilla pudding
1 pkg. Jello-brand lime gelatin
2 c. water
1 1/2 tsp. grated lime rind
2 tbsp. lime juice
3 1/2 c. thawed Cool Whip whipped topping
1 prepared 9 inch pie crust

Combine pie filling mix, gelatin, and water. Cook and stir over medium heat until it comes to full boil. Add lime juice and rind. Pour in bowl, cover with plastic wrap and chill until thickened. Fold in 2 1/2 cups of whipped topping. Spoon into crust. Chill in refrigerator for 3 hours. Before serving top with whip topping.
