2 c. sifted all purpose flour 1/4 tsp. salt 3/4 c. soft butter 1/2 c. sugar 1 egg yolk 1 tsp. vanilla extract OR 1/4 tsp. almond extract 1. Refrigerate ungreased cookie sheets until ready to use. Preheat oven to 375 degrees. 2. Sift flour with salt. Set aside. 3. In large bowl with wooden spoon or portable electric mixer at medium speed, beat butter, sugar, egg yolk, and vanilla until light and fluffy. 4. Beat in flour mixture just until combined. 5. Fill cookie press. Force dough through desired disk of press onto cookie sheet, 1 1/2 inches apart. If dough is too soft to hold its shape, refrigerate 30 minutes. 6. Bake 8 to 10 minutes or until cookies are set, but not brown. Remove to wire rack; cool. Bake at 375 degrees. Makes 3 1/2 dozen. |
