1 lb. steak 2 tbsp. oil 2 tbsp. liquid smoke 1 green pepper 1 onion 8 sm. flour tortillas GARNISHES: Tomato Lettuce Sour cream Guacamole Taco or picante sauce Shredded cheese Slice steak into thin strips. This is easiest if slightly frozen. Fry in oil and liquid smoke until brown; cover and cook until tender. I use VERY inexpensive cuts and allow more time for cooking. Just before serving, add onion and green pepper to meat. Place meat mixture on warm tortillas with desired garnishes. Keep amounts small or you won't be able to roll up the tortilla. Serve with refried beans and Spanish rice. I make a double batch since this would make only about 4 "normal" servings. |
