ROBERTA'S ORANGE MARMALADE
CHICKEN
 
1 lb. jar orange marmalade
1 tbsp. soy sauce (or to taste)
6 cloves crushed garlic (add more if desired)
6 pieces candied ginger (mince finely)
1 c. orange juice
2 fryer chickens (cut in 4ths or 8ths)

Mix first 5 ingredients together and pour over chicken in roasting pan. Bake at 350 degrees uncovered for 1 1/2 hours. Baste often to flavor all chicken equally. Serve with steamed rice. Pass extra sauce.
