LAZY DAY SPONGE CAKE 
1 c. milk, scalded
1/4 c. butter
4 eggs
1 3/4 c. sugar
1 tsp. vanilla
1 3/4 c. flour
1 tbsp. baking powder
1/2 tsp. salt

Generously grease 13"x9" pan. Heat milk to scalding. Add butter to milk; set aside. In large mixer bowl, combine eggs, sugar and vanilla. Beat 1 1/2 minutes at high speed until thick and lemon colored. Add dry ingredients. Beat 1 minute at low speed. Add milk and butter mix. Beat 1 minute at low speed. Pour batter into prepared pan. Bake at 350 degrees for 30 to 35 minutes. Cool slightly. Spread on topping.

TIP: Omit topping. Cut into squares and serve with fresh fruit. Top with whipped cream or ice cream.
