CHICKEN & SAUSAGE GUMBO 
1 lg. hen, cut up
1 lb. sausage, sliced
4 tbsp. oil
4 tbsp. flour
1 lg. onion
1 bell pepper
2 stalks celery
1 clove garlic, crushed
2 doz. oysters (opt.)
1 tsp. thyme
1 tsp. sage
Salt & pepper to taste
2 qts. water or more
1 tbsp. file
1/4 c. chopped parsley

Fry chicken pieces in oil and drain. Brown sausage and drain. Save 4 tablespoons of oil and brown flour. Add water slowly over low heat so it doesn't flame up. Add chicken, sausage, chopped vegetables and seasonings. Save oysters and file. Simmer until chicken is tender. Add oysters and liquid and cook until they curl. Add file when pot is removed from fire. Serve in large bowls with fluffy rice piled up in the center. Sprinkle chopped green onions or chives on top.
