RICE AND BEANS CASSEROLE | |
1 (15 oz.) can black beans, drained and rinsed 1 (10 oz.) pkg. frozen corn 1 c. uncooked white rice 1 (16 oz.) jar thick-chunky mild salsa 1-1/2 c. V-8 1/4 tsp. ground cumin 1/4 tsp. dried oregano 1 c. shredded Cheddar cheese Heat oven to 375 degrees. In a 9 inch square baking dish combine all ingredients except cheese. Cover and bake 55-60 minutes, stirring once halfway through cooking time, until rice is tender. Remove casserole from oven, sprinkle with cheese. Cover and let stand 2-3 minutes until cheese is melted. Serves 4. |
