LEKVAR CAKE
1 c. shortening
3 eggs or 4 egg yolks
1 tsp. baking soda
1/2 pt. (1 c.) sour cream
1/2 c. chopped nuts
1 c. sugar
3 c. flour
1/2 tsp. salt
12 oz. can of Lekvar or apricot
Confectioner's sugar

Cream shortening. Add sugar, flour, baking soda and salt. Add sour cream. Mix well at low speed 2 minutes. Separate dough into 2 parts. Cover bottom of greased and floured tube pan or 11 x 13 inch pan with one part dough. Spread Lekvar or apricot over dough. Add remaining dough on top of fruit. Sprinkle with chopped nuts. Bake at 350 degrees for 1 hour. When cool, sprinkle with confectioner's sugar.

NOTE: I often use Lekvar on one half of the cake and one half apricot on the other when I use the 11 x 13 inch pan.

My grandmother used to make Lekvar cake/apricot cake. However she made the dough with mostly finely ground walnuts. Have you seen a recipe to do it that way? How can I adjust the recipe to do this? She only sprinkled powdered sugar over the top. Thanks,
