BLUEBERRY MUFFINS 
1 1/2 c. flour
1/2 c. whole wheat flour
3/4 tsp. cinnamon
2 tsp. baking powder
1/4 tsp. salt
1 c. milk
1 egg, well beaten
1/4 c. honey
1/2 c. melted butter

Combine flour, whole wheat flour, cinnamon, baking powder and salt. Mix together remaining ingredients. Add to dry ingredients all at once. Do not overmix. Fold in 1 cup blueberries. Butter muffin tins (bottoms only, not sides) and fill each 2/3 to 3/4 full. Bake 25 minutes at 400 degrees. Makes 12 muffins.
