PAN FRIED CHICKEN 
1 to 3 lb. chicken
1/2 c. flour
1 1/2 tsp. salt
1/4 tsp. pepper
1 c. shortening

Cut up chicken, salt and pepper, coat with flour. Place, skin down in hot fat. Brown on all sides. For smothered chicken add 1/4 cup cold water, cover cook on low heat 25 to 30 minutes for crisp chicken. Remove lid after tender and cook 5 minutes at 360 degrees (high heat).
