PEANUT BUTTER FINGERS | |
Dough: 1/2 c. white sugar 1/2 c. brown sugar, packed 1/4 tsp. salt 1/2 c. butter (1 stick) 1/3 c. peanut butter (smooth or crunchy) 1 egg 1/2 tsp. baking soda 1/2 tsp. vanilla 1 c. flour 1 c. oatmeal 1 c. chocolate chips Beat together butter, sugars, peanut butter, soda, salt, vanilla and egg. Stir in flour and oatmeal. Spread dough in bottom of an ungreased 9 x 13-inch pan. Bake at 350°F for 20 minutes. Sprinkle chocolate chips on the top and return to the oven long enough to melt the chips. Spread chocolate evenly. Cool slightly. Icing: 1 c. confectioners sugar 1/2 c. peanut butter 2-4 tbsp. milk With fork, combine the peanut butter, confectioners sugar and enough milk to make a stiff frosting. Spread icing over warm chocolate layer. Cool completely and cut into squares. |
