STUFFED GRAPE LEAVES LENTEN | |
1 bunch parsley, chopped 1/2 bunch mint, chopped 2 med. onions, chopped 1/2 c. chick peas, canned 1 c. oil 1 tsp. black pepper 1/2 tsp. allspice 1 c. lemon juice 2 tsp. salt 96 grape leaves medium size, soaked in boiling water and drained Mix chopped parsley, chopped mint, chopped onions, seasonings, oil, and lemon. Add chick peas. Take each leaf and put 1 tablespoon filling. Begin to roll folding over edges into cigar shape. Squeeze. Begin to place into saucepan arranging in rows and layers. When all the leaves are rolled put water in (approximately 2 1/2 cups), just barely to reach top of leaves. When it boils put a plate on top to keep leaves from floating. Sprinkle 1 teaspoon of salt, 2 tablespoons of lemon juice, 2 tablespoon of oil on top. Cook on low heat about 25 minutes covered being sure liquid does not completely evaporate or leaves will scorch. |
