CHICKEN PARMIGIANA 
4 boneless chicken breasts
1 egg (beaten with little milk & salt)
1 c. cracker crumbs (Ritz)
3 tbsp. oil
Ragu spaghetti sauce
Sliced mozzarella cheese

Dip chicken in egg mixture and bread with cracker crumbs. Fry in oil until browned on both sides. Spoon enough spaghetti sauce in bottom of pan to lightly cover; place chicken breasts in pan and spoon spaghetti sauce over each piece of chicken. Cover with foil and bake 1 hour in 350 degree oven. Sprinkle cheese on top of chicken, return to oven uncovered and bake until cheese is melted.
