MEXICAN CASSEROLE 
1 lb. ground meat
1 sm. bell pepper, chopped
1 sm. onion, chopped
Salt & pepper to taste
1 sm. can green chilies
1 lg. can tomato sauce
1 can hot pinto beans
Garlic powder to taste
1 pkg. enchilada sauce mix
1 c. water
1 lb. Cheddar cheese, grated
1 1/2 to 2 pkgs. tortillas

In a large pot brown beef, onion and green pepper. Add remaining ingredients except tortillas and cheese. Simmer 10 minutes. In a large casserole dish alternately layer meat mixture, cheese and tortillas, beginning and ending with meat. Top with cheese. Bake at 350 degrees for 30 minutes.
