MOCK CHEESE CAKE 
1 pkg. yellow cake mix
4 eggs
2 tbsp. vegetable oil
2 (8 oz.) cream cheese
3/4 c. sugar
1 (8 oz.) carton Half and Half or whipping cream
1 tbsp. vanilla
3 tbsp. lemon juice
1 can fruit pie filling

Reserve 1 cup cake mix. Add oil and 1 egg to the rest of the cake mix. Mix until crumbly and press into 9 x 12 x 2 inch pan and up sides. Put aside.

Cream sugar and cream cheese. Add 3 eggs and 1 cup cake mix. When thoroughly mixed, slowly add cream. Add lemon and vanilla. Put on crust and bake at 325 degrees for 35-40 minutes or until center is firm and crust is golden. Cool 1 hour before refrigerating. Add pie filling when cool.
