PUMPKIN BREAD WITH A GLAZE | |
1 c. oil 1/2 c. chopped pecans 2 c. pumpkin 4 eggs 1/3 c. water 3 1/2 c. flour 3 c. sugar 3/4 tsp. grated orange peel 3/4 tsp. allspice 3/4 tsp. nutmeg 1/2 tsp. cinnamon 1/2 tsp. cloves 1 tsp. salt 2 tsp. baking soda Combine pumpkin, oil, eggs, water and orange peel. Sift together dry ingredients. Add nuts to pumpkin mixture and mix well. Gradually add dry ingredients and mix well. Pour into 2 greased and floured loaf pans or 1 (10 inch) tube pan. Bake at 350 degrees for 70 minutes. Bread springs back when lightly touched. Cool 15 minutes. Glaze with mixture of: 1 c. confectioners' sugar 3 tsp. milk |
