PECAN MUFFINS 
2 eggs
2 tbsp. butter
1/2 c. brown sugar
3/4 c. milk
3 tsp. baking powder
1 tsp. salt
1/2 c. or more chopped pecans
1 1/2 c. flour

Cream butter and brown sugar together. Add two eggs, beaten until light, and 3/4 cup milk. Sift together flour, baking powder and salt. Stir nuts into flour. Combine mixtures and beat until smooth. If batter seems thick (it should be the consistency of cake batter), add a tablespoon or more of milk. Put in small muffin pans and bake in 350 degree oven for about 15 minutes.
