SOUR CREAM CHEESECAKE | |
15 graham cracker squares, crushed 1/2 c. sugar 1/2 tsp. ground cinnamon 1/4 c. butter, melted Combine all ingredients and press into a buttered 9 inch springform pan. Bake at 400 degrees for 6 minutes. Cool completely. CAKE: 2 eggs 1/2 c. sugar 2 tsp. vanilla 1 1/2 c. sour cream 2 (8 oz.) pkg. cream cheese, softened 2 tbsp. butter, melted 1 (16 oz.) can cherry pie filling (optional) Blend eggs, sugar, vanilla and sour cream for 15 seconds in blender. Continue blending and gradually add cream cheese, softened and cut into pieces. Add butter and blend well. Pour cheese mixture into pan with prepared crumb crust. Bake at 325 degrees for 35 minutes or until set in center. Filling will be very soft, but will firm up as cake cools. Chill thoroughly and top with cherry pie filling, if desired. |
