CRANBERRY APPLE JUICE MOLD 
4 c. fresh cranberries
3 (4 serving size) sugar-free raspberry gelatin
Walnut meats, as desired, chopped
3 1/2 c. unsweetened apple juice
1 1/2 c. chopped celery

Halve a 6 cup mold ready. Bring cranberries and 1 cup apple juice to a boil in medium sized saucepan over medium heat. Boil 2-3 minutes until berries pop. Remove from heat. Stir in gelatin until dissolved. Let cool to room temperature. Stir in remaining 2 1/2 cups apple juice, celery and walnut meats. Pour into mold. Cover and refrigerate until firm, at least 8 hours or overnight. Unmold. Makes 8-10 servings.
