EASY CHEESE VEGETABLE SOUP 
1 - 1 1/2 c. celery, sliced
1 - 1 1/2 c. carrots
4 potatoes, peeled & cubed
1 lb. Velveeta cheese, cubed

Place carrots and celery in medium saucepan in 1 to 2 inches of water. Start cooking over medium heat. Add potatoes. Add cheese; cover and simmer for about 20 minutes, until vegetables are tender.
